Easy Flatbreads

I love these easy flat breads, they make great sandwich alternatives and can be whipped up in no time. Take 250g of Strong Bread Flour (I used 2/3s white to 1/3 wholemeal) and mix with 7g yeast and 200ml warm water. Knead and then leave to prove for an hour. Divide into 6 balls, flatten and griddle. Done!
I mix the dough whilst I am waiting for the kettle to boil first thing in the morning, leave to prove whilst I get washed and dressed, everyone fed etc.
Fill with anything you fancy; salad, hummus and falafel, chicken and mango, tuna and cucumber, the list is endless.

Pizza Night



Homemade pizza base, thin and crispy. Fennel salami, chestnut mushroom, cherry tomatoes, sweet baby peppers, mozzarella, rocket and parmesan. Delicious!

The Cosy Club - Stamford



Located in the old Stamford post house, The Cosy Club is a delightfully quirky restaurant serving brunch, lunch, evening meals, also boasting a fantastic cocktail menu. The large industrial structure is softened by the vintage chandeliers, victorian lampshades and flags hung around the room. 
The extensive menu boasts signature brunches, paninis, sandwiches and burgers however Becka and I decided to share a selection from the Tapas menu. Chorizo in red wine, sweet potato falafel, pulled pork in five spice, homemade hummous, patatas with cheese and spring onions, mushrooms in peppercorn and brandy, all served with ciabatta sticks.

Amazing food and amazing value for money, this comfy eatery was the perfect location for a well needed catch up. With 7 locations around the UK, you will not be disappointed, I am already planning a trip for brunch with Dan and Louie!

An Easy 'Mini Quiche' Recipe




I have always been a little scared of making quiche, mainly because I really don't like shop bought ones. However, one Sunday afternoon I decided to give them a try, just to use some bits and pieces up that were lingering in the fridge. I am pleased to say that the recipe was spot on and they have become one of my favourite lunches.
I tend to make a batch at the weekend when the boys are occupied and freeze them ready for lunch boxes during the week. You don't have to fill yours with leek and ham, be creative and see what you have in your fridge!

Wholemeal Pizza Dough


What a way to kick start a new blog, with our favourite recipe of all. The 'go to' recipe. Can't decide what to have? Lets have pizza! 

It may have taken me 3 years, but I have certainly perfected the pizza dough. I opt for wholemeal flour, being mindful of the health benefits as well as the fantastic flavour it gives. If you wish to use the recipe with Strong White Flour, use only 180ml of water. 

I like to use the Allinsons Dried Active Yeast which comes in a little tin, hence adding the yeast to the water in the recipe. It has never let me down, and comes in cheaper than the sachets of yeast. If you do wish to use a sachet, simply add your yeast straight to the flour and begin to add the water. 

This is my favourite recipe for when I am at work all day and don't have much time in the kitchen. It takes me 5 minutes to get the dough together in the morning, I prove it in the fridge all day and the structure when it is baked is phenomenal, definitely worth the wait! I hope you enjoy it just as much as we do.
